At Muti, fermentation isn't a trend. It's one of the oldest ways humans have transformed food.
By giving vegetables, fruit, chillies and spices the time they need, naturally occurring lactic acid bacteria create flavour that's deeper, brighter and more complex than anything vinegar can achieve.
Why no vinegar?
Most hot sauces and many supermarket "ferments" rely on vinegar to create acidity quickly.
We don't.
Our fermented hot sauces develop their acidity naturally during fermentation, creating balance instead of sharpness.
Our live ferments are never pasteurised, so the fermentation process isn't cooked away after it's finished.
Real ingredients. Nothing else.
